  • Cumin seeds – 2 tablespoons
  • Coriander seeds – 2 tablespoons
  • Cardamom seeds – 2 tablespoons
  • Black peppercorns – 2 tablespoons
  • Cinnamon stick – 3-inch stick
  • Cloves – 1 teaspoon 
  • Nutmeg – 1 teaspoon (grated)
  • Saffron – 1/2 teaspoon (ground) 

In a dry heavy skillet dry roast cumin, coriander, cardamom, peppercorns, cinnamon, and cloves over medium-high heat until they turn slightly darker and give off a sweet, smoky aroma. This should take about 10 minutes. And yes, remember patience is key! Don’t try to raise the heat to speed up the process, or the spices will brown prematurely, leaving the insides undercooked. 

Once you have toasted the whole spices let it cool completely. Transfer the mixture to a spice mill or coffee grinder and grind to a powder. In the end, stir in the nutmeg and saffron. Once ready, store the fresh garam masala powder in an airtight container in a cool, dry place.
